
With the scorching heat becoming relentless, turning on the stove is the last thing on my mind. Summer has hit "mission critical" and I am a firm believer that hot times in the city call for supper to be a thing of simplicity and grace. Something composed seems appropriate, chilled or even room temperature.
My ideal? A luscious Caprese Salad made with heirloom tomatoes, velvety mozzarella di bufala and bits of fragrant basil. Drizzle a little Champagne vinegar and fruity olive oil on the plate. Top with a sprinkling of sea salt and freshly cracked pepper.
The perfect dinner.
Made all the more perfect when eaten in front of the air conditioning.
