The city has gone swine mad. I've admitted to my obsession before, but it looks like New York has finally caught up with The Vamp's consuming passion for pork.
From New York Magazine naming the Glazed Berkshire Pork Tournedos at Adour the "Best Pork Belly Dish of 2008," to Chef Mario Batali serving his bread baskets at Del Posto with ramekins of spreadable lard, to my local hang, Jack the Horse Tavern, offering up a sublime Suckling Pig special (pictured above) the other night, you can hear happy squeals of oinking all over town.
We regale in Chef Sara Jenkin's porcine sandwich shack Porchetta, Hog Pit's Candied Bacon served with Whipped Cream, Clover Club's decadent brunch-time Bacon Tasting, Chef Ryan Skeen "the Pork King's" dazzling pig-packed menu at Irving Mill, and PDT's Bacon-Infused Old Fashioneds.
There's no debate. This is pork's big moment in the culinary spotlight.
Guess it's time for the National Chicken Council to come out with a new slogan: "Chicken: The Other White Meat."
