Yeah, I'm a kitchen control freak as well. Which is why 13 years ago I absolutely forbade anyone to have thanksgiving any place else. The disasters or the cost of a gorgeous buffet was too much. I could do better and for 1/8th the cost. But after all these years, I'm tired. So, while still hosting I have others bring everything I need. Well, you see, I do the turkey and gravy. This year add a really fancy whole duck I'll be putting in the smoker!
